Sensational Superfood Soup

Ingredients:

  • 2 cups of sliced carrots
  • 1 large sweet potato, cut into ½” cubes
  • 1 cup of fresh or frozen green beans
  • 1 cup of fresh cilantro, chopped
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 2 (15 oz.) cans of black beans, drained and rinsed
  • ½ teaspoon crushed black pepper flakes
  • ½ teaspoon of black pepper
  • 1 teaspoon of chili powder
  • 1 teaspoon of cumin
  • 3 teaspoons of turmeric
  • 2 cups of vegetable juice (no sugar added)
  • 2 cups of vegetable broth
  • Sea salt to taste

Directions:

  1. Combine all ingredients in the slow cooker, cover and cook on low for 6-8 hours, or until veggies are tender.

Serves 4 (with some leftovers)
